 Sunken Sunset (Gorgonzola and Thyme)
1 Cup Tapioca Flour
1/8 tsp nutmeg
1 Cup Whole Milk
2 Lg. eggs
1 Tab. Grapeseed Oil
1 tsp. Guar Gum
1 Tab. Fresh Thyme
3/4 Cup Crumbled Gorgonzola Cheese
450 for 15 min
350 for 20 min
Blend dry Ing. in bowl
Blend wet Ing. with Gorgonzola and thyme
Add dry Ing. to the wet and blend to incorporate
 Bake at 450 for 15 min then lower temp.
Can be made in a muffin tin, individual cups or popover pan
grease and flour before pouring batter in.
Poetic Pear Chutney
3 Bosc Pears peeled,cored and cubed (soak in orange juice to prevent browning)
I small orange (juice and zest)
1/4 tsp heaping of cinnamon
1/8 tsp nutmeg
3 Tab. dark brown sugar
3/4 Cup Sultana’s (golden raisins)
1/8 tsp salt
couple grinds of pepper
Simmer on low for 30 with lid then take the lid off and simmer an additional 10 min
Remove from heat and add 1/8 tsp vanilla ext
Pinch of orange zest
Let cool slightly and serve warm/room temp
Other combinations to consider instead of Gorgonzola and thyme could be:
Sun-dried tomato & Basil with goat cheese or fontina
Pesto and Parmesan
Pine nut, rosemary and Brie
Kalamata olive,red pepper, and feta
